Garden Market Greens & Citrus Salad with Pink Peppercorn & Champagne Dressing
Bright, bubbly, and softly peppered with love — a lakeside favourite.
✨ Ingredients
For the Salad:
1 large bag of Garden Market Greens
1 large grapefruit, segmented
2 cara cara oranges or blood oranges, segmented
1 small avocado, thinly sliced
¼ small red onion, sliced paper-thin
¼ cup toasted pistachios or slivered almonds
Flaky sea salt, for finishing
Edible petals (nasturtiums or pansies), optional but magical
For the Pink Peppercorn & Champagne Vinaigrette:
¼ cup extra virgin olive oil
2 tbsp champagne vinegar
1 tsp honey or agave
1 tsp Dijon mustard
½ tsp crushed pink peppercorns (lightly smashed with the back of a spoon or with a pestle & mortar)
Pinch of sea salt
Optional: a splash of fresh grapefruit juice for extra zing
🌙 Instructions
1. Segment the Citrus
Cut off the top and bottom of each citrus fruit. Slice away the peel and pith, then cut along the membranes to release clean segments. Chill segments in the fridge until ready to use.
2. Make the Dressing
In a small bowl or jar, whisk together the champagne vinegar, honey, mustard, pink peppercorns, and salt. Slowly drizzle in the olive oil while whisking until emulsified. Add a splash of grapefruit juice for extra brightness, if desired.
3. Assemble the Salad
In a large bowl, gently toss the garden market greens with just enough vinaigrette to lightly coat the greens. Plate a base of greens for each guest.
4. Add Toppings
Layer on citrus segments, avocado slices, and red onion. Sprinkle with nuts, drizzle with a little more vinaigrette, and finish with flaky sea salt and edible petals.
